Pork, sage & pistachio stuffing

Indulge in the ultimate roast dinner stuffing recipe.
Ingredients:
  • Melted butter, to grease
  • 36.40 gm olive oil
  • 20g butter
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 400g pork mince
  • 210g (3 cups) fresh breadcrumbs (made from day-old bread)
  • 110g (2/3 cup) pistachio kernels
  • 1 egg, lightly whisked
  • 40.00 ml coarsely chopped fresh sage
  • Salt & freshly ground black pepper
Instructions:
  • Preheat oven to 180C and line a 30 x 40cm piece of foil with butter for greasing.
  • In a frying pan over medium heat, heat oil and butter. Add onion and cook, stirring, for 5-6 minutes until soft. Then add garlic and cook for 1 minute until aromatic. Transfer to a heatproof bowl and set aside to cool slightly for 5 minutes.
  • Combine pork, breadcrumbs, pistachios, egg, and sage with the onion mixture. Season generously with salt and pepper, then mix everything together using your hands until well combined.
  • Shape the pork mixture into a 25cm-long log, 8cm thick, on a piece of foil. Seal the foil, place on a baking tray, and bake in the oven for 40 minutes until cooked. Let it rest for 5 minutes, then unwrap and rest for an additional 10-15 minutes. Slice and serve.
