Pork and fennel sausage rolls with crispy coleslaw

Enjoy family-friendly sausage rolls with a side of crispy coleslaw for an easy, stress-free weeknight meal.
Ingredients:
  • 1 small brown onion, finely chopped
  • 2 tsp fennel seeds, lightly crushed (see note)
  • 125.00 ml fresh breadcrumbs
  • Pinch of nutmeg
  • 600g pork and veal mince
  • 2 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
  • 6.00 gm sesame seeds
  • 375g packet shredded coleslaw
  • 132.50 gm honey mustard dressing
Instructions:
  • Preheat your oven to 220C/200C fan-forced and prepare a baking tray by lining it with parchment paper.
  • In a saucepan, heat oil over medium-high heat. Sauté onion and garlic until softened, about 5 minutes. Stir in fennel seeds and cook until fragrant, about 1 minute. Transfer to a large heatproof bowl and let cool for 5 minutes. Add breadcrumbs, nutmeg, mince, salt, and pepper. Mix thoroughly to combine.
  • Cut each pastry sheet in half. Shape a portion of the mince mixture into a 24cm-long sausage. Lay it along one long side of a pastry half. Brush the opposite edge with egg wash. Roll up to seal the filling inside. Trim the ends, then cut in half. Place seam-side down on the baking tray and continue with remaining pastry and mince mixture.
  • Coat the tops of the sausage rolls with a glossy egg wash, sprinkle with sesame seeds, and bake until beautifully golden and puffed, about 25 minutes.
  • Combine the coleslaw and dressing in a large bowl, toss well. Serve the sausage rolls with the coleslaw on the side.
