Pork and fennel sausage rolls

Savory pork and fennel sausage rolls - a gourmet twist on a classic party snack.
Ingredients:
  • 18.20 gm olive oil
  • 1 large fennel bulb, trimmed, finely chopped
  • 1kg pork sausage mince
  • 140g breadcrumbs
  • 4 sheets (25cm) ready-rolled puff pastry, thawed, halved
  • 1 egg, lightly whisked
  • 20.00 ml fennel seeds
Instructions:
  • Preheat the oven to 200°C and line 2 baking trays with baking paper. Heat oil in a frying pan over medium heat, then cook fennel and garlic, stirring occasionally, for 10 minutes until fennel softens. Remove from heat and let cool.
  • Mix together fennel mixture, sausage mince, and breadcrumbs in a bowl. Season with pepper. Transfer the sausage mixture into a large piping bag fitted with a 2cm plain nozzle. Pipe the sausage mixture along the pastry sheet edge. Roll it up, sealing the edge with a little egg wash. Cut the roll into 4cm pieces using a sharp knife. Arrange the pieces on a tray. Repeat the process with the remaining mince and pastry sheets. Brush the rolls with the remaining egg, sprinkle with fennel seeds, and chill in the fridge for 30 minutes before baking.
  • Bake until golden brown, puffed, and fully cooked, about 15-20 minutes. Serve warm or at room temperature on a platter.
