Impress with a modern, healthier sweet and sour twist.
Ingredients:
  • 18.40 gm oil
  • 400g pork fillet, sliced
  • 6 green onions, sliced
  • 1 bunch broccolini, trimmed
  • 250.00 ml bean sprouts
  • 1/2 red capsicum seeded, cut into chunks
  • 125.00 ml canned pineapple, chunks 125.00 ml juice reserved
  • 63.13 gm white (or rice) vinegar
  • 45.00 gm brown sugar
  • 10.00 gm cornflour, blended with 1/3 cup water
  • 250g pkt thick egg noodles, cooked and drained
  • 62.50 ml roast cashews, chopped
Instructions:
  • In a hot wok, stir-fry pork in two batches for 2-3 minutes each, adding onions in the last minute.
  • Combine broccolini, sprouts, capsicum, and pineapple along with the reserved juice, vinegar, sugar, and cornflour mixture. Bring to a boil while stirring continuously.
  • Simmer noodles for 2-3 minutes, then top with cashews before serving.
