Family-friendly slurpy noodles for a fast meal.
Ingredients:
  • 350g packet fresh Singapore noodles
  • 20.00 gm cornflour
  • 500g diced pork
  • 36.40 gm peanut oil
  • 1 red onion, halved, thinly sliced
  • 1 medium red capsicum, thinly sliced
  • 1 medium green capsicum, thinly sliced
  • 184.80 gm sweet and sour sauce
  • 440g can pineapples pieces in juice, drained
Instructions:
  • Place noodles in a large heatproof bowl and cover with boiling water. Let stand for 1 to 2 minutes until tender. Use a fork to separate noodles, then drain them.
  • Next, combine cornflour and pork in a bowl, ensuring the pork is evenly coated.
  • Heat a wok over high heat and add half of the oil, swirling to coat. Stir-fry half of the pork until golden, then transfer to a bowl. Repeat with the remaining oil and pork. Reduce the heat to medium-high, and stir-fry the onion until softened. Return the pork to the wok, add capsicum, and stir-fry until tender. Add sauce, pineapple, and noodles, and stir-fry until heated through. Serve.
