Pork and Sweet Potato Chili

Experience the unexpected nutty twist sweet potatoes bring to chili, enhancing the flavors of pork, beans, and tomatoes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, chopped (1 cup)
  • 1 lb boneless pork loin, trimmed of fat, cut into 3/4-inch cubes
  • 4 teaspoons chili powder
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 2 medium sweet potatoes, peeled, cut into 3/4-inch cubes (about 3 cups)
  • 1 can (15.5 oz) great northern beans, drained, rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon grated orange peel
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • In a 4-quart saucepan, heat oil over medium-high heat. Sauté onion for about 2 minutes until tender, stirring frequently.
  • Cook the pork and chili powder together, stirring occasionally, for about 4 minutes or until the pork is fully cooked and no longer pink.
  • Add all the remaining ingredients, then lower the heat to medium-low. Cover and let it simmer for 15 to 20 minutes, or until the sweet potatoes are tender.
