Ingredients:
  • 500g orange sweet potato, peeled, cubed
  • 600g pork fillet, cubed
  • 36.40 gm olive oil
  • 10.00 gm ground cumin
  • 96.53 gm wholegrain mustard
  • Chopped chives, to serve
  • Apple sauce, to serve
Instructions:
  • In a microwave-safe bowl, combine the potato and 2 tablespoons of water. Cover and microwave on high for 4 to 5 minutes until the potato is just tender. Drain and allow to cool before using.
  • Skewer the pork and potatoes, then place them in a dish. Drizzle with oil and sprinkle with cumin, turning to coat evenly.
  • 1. Preheat a barbecue plate or chargrill over medium heat. Grill skewers, turning occasionally, for 6 to 8 minutes until pork is cooked through and potatoes are browned. Transfer to a plate, cover, and let rest for 5 minutes before serving.
  • Brush skewers with tangy mustard, sprinkle with fresh chives, and serve alongside a side of sweet apple sauce.
