Tender pork loin and sweet potatoes stewed with garlic, perfect for cooler seasons.
Ingredients:
  • cooking spray
  • 0.25 cup Dijon mustard
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup all purpose flour
  • 3 pounds pork loin, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 1.3333330154419 cups chicken broth
  • 1 cup dry sherry
  • 3 pounds sweet potatoes, cut into 1-inch cubes
  • 0.25 teaspoon crushed dried rosemary
  • 0.25 teaspoon thyme
Instructions:
  • Preheat the oven to 350°F (175°C) and coat a large casserole dish or Dutch oven with cooking spray.
  • In a bowl, spread Dijon mustard. In another bowl, mix brown sugar and flour. Coat pork cubes with Dijon mustard, then dredge in the brown sugar-flour mixture until fully coated.
  • In a large skillet over medium heat, warm olive oil. Sear pork cubes coated in brown on all sides for 3 minutes each. Place seared pork in a casserole dish, keeping the flavorful oil in the skillet.
  • Saute onion and garlic in a hot skillet until onions are soft, around 5 minutes. Add chicken broth, sherry, sweet potato cubes, black pepper, rosemary, thyme, and salt to the skillet and bring to a boil. Pour the sweet potato mixture over the pork in a casserole dish and cover.
  • Roast in the preheated oven for 50 minutes, then uncover and continue baking until the pork is cooked through and the sweet potato cubes are soft, about 20 minutes more.
