Pork and vegetable meatloaf

Delicious pork and veal meatloaf served with creamy mashed potatoes and fresh greens.
Ingredients:
  • 750g pork and veal mince
  • 65g rolled oats
  • 1 carrot, coarsely grated
  • 1 zucchini, coarsely grated, excess liquid squeezed out
  • 1 brown onion, coarsely grated
  • 1 small red capsicum, finely chopped
  • 130.00 gm tomato sauce
  • 24.40 gm Worcestershire sauce
  • 1 egg, lightly whisked
  • Salt & freshly ground pepper
  • Creamy mashed potato, to serve
  • Steamed green beans, to serve
  • Tomato chutney, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 11 x 21cm x 6cm-deep loaf pan. Combine mince, oats, carrot, zucchini, onion, capsicum, sauces, egg, salt, and pepper in a large bowl.
  • Combine mince mixture using your hands until thoroughly mixed. Transfer mixture into a greased pan and press down to create a smooth surface. Bake for 45-50 minutes or until golden brown and fully cooked. Allow it to rest in the pan for 10 minutes before serving.
  • Remove any extra liquid from the meatloaf. Transfer it to a cutting board. Slice and enjoy with mashed potatoes, steamed beans, and chutney.
