Pork meatloaf

Budget-friendly cheesy meatloaf with depth of flavor from chillies, perfect for family feasts. Uses stale bread for a flavorful twist. Customize by omitting chillies for kid-friendly version.
Ingredients:
  • 3 carrots
  • olive oil
  • 100 g stale bread
  • 500 g minced pork
  • 2 heaped teaspoons dried oregano
  • 30 g feta cheese
  • 1 large egg
  • 3 fresh red chillies
  • 1 onion
  • 2 cloves of garlic
  • 1 x 700 ml jar of passata
  • 30 g Cheddar cheese
  • 480 g dried spaghetti
Instructions:
  • - Preheat the oven to 200ºC/400ºF/gas 6. - Peel and quarter the carrots, place in a roasting tray (roughly 25cm x 30cm), drizzle with oil, and cook for 10 minutes. - Blitz the bread into breadcrumbs in a food processor, then mix with pork, half the oregano, crumbled feta, egg, sea salt, and black pepper. Shape into a loaf (roughly 20cm long). - After the carrots cook for 10 minutes, create a space in the middle of the tray and add the meatloaf. Cook for an additional 25 minutes until golden and cooked through. - Halve and deseed the chillies, then sauté with onion, garlic, and remaining oregano in a pan. Add passata, season, and simmer until the meatloaf is ready. - Pour the sauce around the meatloaf, top with grated Cheddar, and return to the oven for 5 to 10 minutes until golden. - Cook the spaghetti according to package instructions, then serve everything at the table with a salad. Slice the meatloaf and enjoy with the sauce and chillies.
