Pork Apple Meatballs

Sweet and salty pork meatballs with applesauce and carrots.
Ingredients:
  • 4 ounces dried mushrooms, chopped
  • 0.5 cup warm water
  • 1 pound ground pork
  • 2 carrots, shredded
  • 0.33333334326744 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 egg white
  • 0.5 cup applesauce
  • 0.25 cup water
  • 2 tablespoons maple syrup
  • 2 teaspoons brown sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and coat a 2-quart baking dish with cooking spray.
  • In a bowl, soak the dried mushrooms in 1/4 cup of warm water for about 30 minutes until they are rehydrated. Drain the mushrooms, saving the water, and set both aside.
  • In a big bowl, mix ground pork, carrots, onion, garlic, 2 tablespoons of soy sauce, drained mushrooms, and egg white by hand until well combined. Shape the mixture into 16 meatballs and place them in the baking dish.
  • Combine the mushroom water, applesauce, 1/4 cup water, maple syrup, soy sauce, and brown sugar in a bowl. Pour the mixture over the meatballs and cover with aluminum foil.
  • Bake in the preheated oven for a total of 65 minutes, removing the foil after 45 minutes to ensure the meatballs are fully cooked and no longer pink in the center.
