Revamp pork chops with tangy Bengali sweet tomato chutney using juicy overripe tomatoes for maximum flavor.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon mustard seed
  • 1 (2 inch) piece cinnamon stick
  • 0.5 teaspoon fennel seeds
  • 6 large tomatoes, cut into 8 wedges
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt, or to taste
  • 1 cup water
  • 0.5 cup white sugar
  • 8 bone-in pork loin chops (1 inch thick)
  • 1 pinch salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, heat 2 tablespoons of oil. Add cumin seed, mustard seed, and cinnamon stick. Cook until fragrant and seeds begin to pop, about 1 minute. Stir in fennel seed, then add tomatoes. Season with cayenne pepper and salt. Pour in water, reduce heat to low, cover, and simmer until tomatoes are very soft, about 20 minutes.
  • Combine the sugar with the tomatoes over high heat until the sugar dissolves and the mixture turns glossy, stirring constantly for about 3 minutes. Remove from heat and set aside.
  • Season pork chops with a pinch of salt and a dash of pepper. In a large skillet over medium-high heat, heat the remaining oil. Cook pork chops on both sides until golden and fully cooked, approximately 4 minutes per side. Let them rest for a few minutes before serving.
  • Top pork chops with a generous spoonful of chutney before serving.
