Indulge in succulent pork cutlets paired with a sweet apple and plum sauce, perfect for a family feast.
Ingredients:
  • 2 corn cobs, husks and silks removed
  • 36.40 gm olive oil
  • 4 (about 225g each) Pork Cutlets
  • 2 small Red Delicious apples, thinly sliced crossways
  • 1 long red chilli, thinly sliced
  • 5cm-piece ginger, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 125ml plum sauce
  • 42.00 gm lemon juice
  • 200g pkt baby brussels sprouts, halved
  • 120g pkt Baby Spinach & Red Beetroot Leaves
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Brush corn with oil and grill, turning occasionally, for 8 minutes or until tender. Transfer to a plate.
  • Season the pork generously. Grill for 3-4 minutes on each side or until fully cooked. Place the pork on a plate and cover it with foil. Let it rest for 5 minutes before serving.
  • In a frying pan over medium-high heat, heat the remaining 2 teaspoons of oil. Cook the apple until golden, turning occasionally, for about 3-4 minutes. Stir in the chilli, ginger, and half of the garlic, cooking for 1 minute until fragrant. Add plum sauce and half of the lemon juice, bring to a boil, then simmer on low heat for about 1 minute until the sauce slightly thickens.
  • In a hot frying pan, sizzle the rest of the oil with the remaining garlic and Brussels sprouts, cut-side down until lightly browned, about 1-2 minutes. Drizzle in the rest of the lemon juice and transfer to a serving bowl.
  • Carefully slice off the kernels from the corn in long pieces using a sharp knife. Mix salad leaves into the brussels sprout mixture. Season with desired seasonings and toss gently to combine. Serve the pork and apple on plates, drizzle with sauce, and enjoy with the salad and corn.
