Try this quick and delicious Tuscan pork cutlet recipe for a healthy and satisfying mid-week meal.
Ingredients:
  • olive oil cooking spray
  • 4 (150g each) pork cutlets, trimmed
  • 5.00 gm Tuscan seasoning
  • 60g baby spinach
  • 3 small tomatoes, cut into wedges
  • 100g feta, chopped
  • 82.50 ml kalamata olives
  • 3 tsp balsamic vinegar
  • 4.60 gm olive oil
Instructions:
  • Prepare the barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Coat both sides of the pork with oil and sprinkle with seasoning. Grill the pork for 4 minutes on each side for a medium cook or until desired level of doneness is reached.
  • While waiting, prepare a delicious Greek salad by mixing together fresh spinach, ripe tomatoes, creamy feta cheese, briny olives, tangy vinegar, and rich olive oil in a bowl. Add a pinch of salt and pepper for seasoning, then toss everything together until well combined. Serve the succulent pork with this flavorful salad.
