Pork cutlets with stir-fried cabbage

Elevate pork cutlets with a bold, flavorful marinade.
Ingredients:
  • 4 lean pork loin cutlets
  • Olive oil cooking spray
  • 150g green beans, sliced diagonally
  • 1/4 red cabbage or green cabbage, sliced
  • 1 red capsicum, deseeded, sliced
  • 5.30 gm reduced-salt soy sauce
  • 82.50 gm chilli jam, to serve (see note)
  • 5cm piece ginger, grated
  • 1 small red chilli, deseeded, finely chopped
Instructions:
  • Prepare marinade by mixing all ingredients in a ceramic dish. Reserve 2 teaspoons of the marinade. Add pork to the rest of the marinade, ensuring it is coated. Let it sit at room temperature for 10 minutes.
  • Preheat a large frying pan over medium-high heat. Lightly coat with oil. Sear pork for 3 to 5 minutes per side until cooked through. Transfer to a plate, cover with foil, and let it rest.
  • Wipe clean the frying pan and heat over high heat until hot. Spray with oil and add beans. Cook for 2 minutes, tossing occasionally. Add cabbage, capsicum, and reserved marinade. Continue cooking for 3 to 5 minutes until the beans are tender and the cabbage has wilted. Remove from heat and stir in soy sauce. Divide the cabbage mixture between serving plates and top each with a pork cutlet and a dollop of chilli jam before serving.
