Coat pork cutlets in irresistible honey mustard sauce for a speedy and delicious family meal that will leave everyone excited to eat.
Ingredients:
  • 800g pork cutlets
  • 18.20 gm olive oil
  • 200g small button mushrooms
  • 1 bunch spring onions, trimmed, halved
  • 3 garlic cloves, thinly sliced
  • 127.50 gm chicken style liquid stock
  • 375.00 ml frozen peas
  • 46.80 gm dijon mustard
  • 40.40 gm light thickened cream
  • 28.60 gm honey
  • 10.60 gm lemon juice
  • Mashed potato, to serve
  • Lemon wedges, to serve
Instructions:
  • Season the pork generously with salt and pepper. Heat half of the oil in a large frying pan over medium-high heat. Sear the pork for 4 minutes on each side or until it is perfectly cooked. Remove from the pan and cover to keep warm.
  • In a pan over medium-high heat, heat the rest of the oil. Add mushrooms, onions, and garlic. Cook and stir for about 5 minutes until they are golden and tender. Pour in the stock, cover, and simmer for 3 minutes until the onions are just tender.
  • Combine peas, mustard, cream, and honey in a pan. Season with salt and pepper, then stir well. Bring to a boil and cook for 1 minute or until the sauce slightly thickens. Finish by stirring in the juice.
  • Garnish cutlets with a side of vegetables, mashed potatoes, and lemon wedges.
