Ingredients:
  • 1 small brown onion, finely chopped
  • 375.00 ml dried mixed fruit
  • 3 (300g each) pork fillets, trimmed
  • 3 rashers streaky bacon, rind removed
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Place the fruit in a bowl and pour 2 cups of boiling water over it. Let it sit for 10 to 15 minutes until plump, then drain.
  • Heat a non-stick frying pan over medium-high heat. Cook onion for 5 minutes until softened. Combine with fruit and stir.
  • Carefully slice each fillet lengthwise, creating a pocket without cutting all the way through. Fill each pocket with one-third of the fruit mixture, then wrap each fillet with bacon and tie securely with string.
  • Preheat a non-stick pan over medium-high heat. Sear pork for 5 minutes until golden. Place in a roasting dish and bake for 15-20 minutes until fully cooked. Rest for 5 minutes, slice, and enjoy.
