Try this flavorful Asian pork and udon noodle dish for a simple mid-week dinner!
Ingredients:
  • 2 bunches (2 cups) coriander leaves and stems, chopped
  • 150g peanuts
  • 125ml peanut oil
  • 1 long red chilli, chopped
  • 2 cloves garlic, chopped
  • 12.20 gm fish sauce
  • 400g pork fillet
  • 2 tsp sesame oil
  • Salt & freshly ground pepper
  • 440g packet fresh udon noodles
Instructions:
  • Preheat your oven to 180°C.
  • In a food processor, combine coriander (setting some aside for garnish), peanuts, peanut oil, chili, garlic, and fish sauce. Pulse until a textured paste forms. Finely chop reserved coriander for garnish.
  • Coat Heart Smart pork fillets in fragrant sesame oil and season generously with salt and pepper. Sear the pork in a hot ovenproof frying pan for 2 minutes on each side until beautifully browned. Finish cooking in the oven for 7-10 minutes. Allow the pork to rest covered with foil for a minimum of 5 minutes before slicing into thick, juicy pieces. Be cautious of the hot pan handle when removing from the oven.
  • Cook noodles in bubbling water for 2 minutes. Drain noodles, saving 1/4 cup of their cooking liquid. Mix warm noodles with 1 cup of coriander paste and some reserved cooking liquid to coat.
  • Top a bed of noodles with succulent pork and fresh coriander leaves for a delightful presentation.
