Quick Mediterranean pork dish: sauteed pork chunks marinated in tangy vinaigrette.
Ingredients:
  • 1.5 pounds pork tenderloin, cut into bite-size pieces
  • 4 sprigs fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 4 tablespoons red wine vinegar
  • 2 tablespoons port wine
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch cayenne pepper
Instructions:
  • In a large heavy skillet over high heat, warm up 2 tablespoons of olive oil. Cook the pork until it's nicely browned and fully cooked. Transfer to a bowl and sprinkle with fresh cilantro and garlic to keep it warm.
  • In a small bowl, mix 3 tablespoons of olive oil with vinegar and port. Season generously with salt, black pepper, and cayenne. Whisk until smooth and creamy. Fold into the cooked pork and serve promptly.
