Pressure Cooker Pork Tenderloin

Marinate pork tenderloin in zesty lime juice, olive oil, cilantro, and red pepper flakes before pressure cooking with flavorful chicken broth and lemon juice.
Ingredients:
  • 0.25 cup fresh cilantro leaves
  • 0.25 cup olive oil
  • 0.25 cup lime juice
  • 2 cloves garlic, sliced
  • 0.5 teaspoon red pepper flakes, or to taste
  • 0.25 teaspoon salt, or to taste
  • 1 pound pork tenderloin
  • 0.75 cup chicken broth
Instructions:
  • In a blender, combine cilantro, olive oil, lime juice, garlic, red pepper flakes, and salt until smooth. Place the pork tenderloin in a large resealable plastic bag, add the marinade, and coat the pork well. Seal the bag, removing any excess air, and refrigerate for 8 hours to overnight.
  • Mix chicken broth and lemon juice in the pressure cooker. Place the tenderloin in the liquid, then pour the rest of the marinade over it.
  • Secure the lid of the pressure cooker and cook on high heat until the indicator sounds. Lower the heat to medium and cook for 25 minutes. Allow it to sit for 5 minutes off the heat. Release the pressure quickly by running it under cold water, then slice the tenderloin into medallions before serving.
