Savory pork neck cooked in red wine broth with bell peppers, onions, and potatoes for a hearty Southern dish.
Ingredients:
  • 9 pounds pork neck bones
  • 2.5 teaspoons ground black pepper
  • 2.5 teaspoons adobo seasoning
  • 1 teaspoon thyme
  • water
  • 2 cups red cooking wine
  • 0.5 cup vinegar
  • 0.5 cup chopped cilantro
  • 0.5 cup chopped fresh basil
  • 2 white onions, sliced
  • 2 green bell peppers, seeded and cut into strips
  • 3 cloves garlic, minced
  • 8 potatoes, peeled and cubed
Instructions:
  • In a large bowl, season the pork neck bones with black pepper, adobo seasoning, and thyme. Cover with plastic wrap and refrigerate for about 1 hour to marinate.
  • Fill a large stockpot halfway with water, then infuse it with the aromatic blend of cooking wine, vinegar, cilantro, basil, onions, green bell peppers, and garlic. Bring it to a lively boil, gently drop in the pork neck bones, then simmer over low heat for an hour, stirring occasionally.
  • Mix the potatoes into the pot. Cover and simmer, stirring occasionally, until the neck bones and potatoes are tender, around 30 minutes.
