Simmered seasoned pork neck bones with creamy lima beans - a comforting Southern favorite.
Ingredients:
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon rubbed sage
  • 1 tablespoon ground nutmeg
  • 1 teaspoon seasoned salt
  • salt and pepper to taste
  • 3 pounds pork neck bones
  • 1 cup diced onion
  • 1 cup chopped red bell pepper
  • 1 (16 ounce) package dried lima beans
  • 10 cups water, divided
Instructions:
  • In a small bowl, blend garlic powder, onion powder, cayenne pepper, sage, nutmeg, seasoned salt, salt, and pepper. Massage 3/4 of the mixture onto the pork neck bones; reserve the neck bones and the rest of the seasoning.
  • In a large skillet, heat olive oil over medium heat. Sauté onion and bell pepper until onion is soft and translucent, about 5 minutes. Then add neck bones, cover, and simmer on low for 1 hour, stirring occasionally and adding water if necessary to prevent sticking.
  • While you wait, add the lima beans to a large pot, pour in 8 cups of water, and bring to a high boil. Turn off the heat, cover, and let sit for 1 hour.
  • Once the beans have soaked for 1 hour, discard the water and give them a good rinse. Place the beans back into the pot and add 2 cups of water. Bring everything to a boil on high heat, then add the pork, veggies, and remaining spices. Lower the heat, cover the pot, and let it simmer for about 30 minutes until the lima beans are tender and the pork is perfectly tender.
