Tender pork neck bones, roasted to golden perfection, make a mouthwatering Southern dish that pairs perfectly with greens.
Ingredients:
  • 2 onions, roughly chopped
  • 5 cloves garlic, roughly chopped
  • 1 tablespoon distilled white vinegar
  • 4 pounds pork neck bones
  • 1.5 teaspoons salt
Instructions:
  • Begin by preheating your oven to a toasty 375 degrees F (190 degrees C).
  • Spread a generous layer of 3/4 of the chopped onions and 3/4 of the chopped garlic on the bottom of a roasting pan. Add water and vinegar. Season neck bones with salt and pepper, then nestle them into the pan. Top with the rest of the onions and garlic, and securely cover the pan with aluminum foil.
  • Roast in the preheated oven for 2 hours, ensuring to baste every 30 minutes and cover with foil each time you baste.
  • Uncover and cook until the neck bones turn a beautiful golden brown, approximately 45 minutes more.
