Juicy pork ribs with homemade pear chutney and creamy mashed potatoes - a flavorful feast for loved ones.
Ingredients:
  • 8 Pork Spare Ribs
  • Olive oil spray
  • 20.00 ml fennel seeds
  • 9.20 gm olive oil
  • 2 x 350g tubs Crème Royal Mashed Potato
  • Sage sprigs, to serve
  • Baby rocket leaves, to serve
  • 2 pears, peeled, cored, thinly sliced
  • 1 small red onion, thinly sliced
  • 55g caster sugar
  • 40.00 ml apple cider vinegar
  • Pinch ground nutmeg
  • 20.00 ml sage, shredded
Instructions:
  • In a medium saucepan over medium heat, combine pear, onion, sugar, vinegar, nutmeg, and 2 tablespoons of water. Bring to a boil, then reduce heat to low and simmer for 5 minutes. Add sage and continue simmering for another 5 minutes until the sauce thickens.
  • Spritz the pork with olive oil and massage with fennel seeds to fully coat. Season generously. Grill the pork on a hot pan for 3 minutes on each side until beautifully golden and well-cooked. Place on a plate, cover with foil, and let it rest for 2 minutes. Slice the pork in half crosswise before serving.
  • Prepare the mashed potatoes according to the package instructions.
  • Spoon the mashed potato and pork onto plates, top with chutney and sage sprigs, and serve with baby rocket leaves.
