Pork Slaw Salad with Creamy Coconut Dressing recipe

Tender, flavorful pork paired with zesty slaw and creamy coconut dressing - a dish you'll crave on repeat!
Ingredients:
  • 18.20 gm peanut oil
  • 500g pork mince
  • 2 tsp finely grated ginger
  • 71.50 gm honey
  • 1/2 tsp dried chilli flakes
  • 12.00 gm sesame seeds
  • 166.65 gm coconut cream
  • 131.25 gm lime juice
  • 2 tsp finely grated lime rind
  • 1 large carrot, peeled, cut into thin matchsticks
  • 1 small red onion, halved, thinly sliced
  • 100g bean sprouts, trimmed
  • 100g snow peas, thinly sliced lengthways
  • 1/2 baby wombok (Chinese cabbage), finely shredded
  • 1/4 small red cabbage, finely shredded
  • 125.00 ml chopped fresh coriander
  • 125.00 ml coarsely chopped unsalted roasted peanuts
Instructions:
  • In a large frying pan over high heat, heat oil. Cook mince for 5-7 minutes, breaking up with a wooden spoon, until browned. Add ginger, garlic, 2 tablespoons honey, chilli flakes, and seeds. Cook for 2 minutes without stirring until pork is crispy and golden.
  • In a large bowl, mix together cream, juice, rind, and remaining honey. Add carrot, onion, sprouts, snow peas, cabbages, half of the coriander, and peanuts. Season with salt and pepper, then toss everything together.
  • Distribute salad onto individual serving plates. Add mince mixture on top and sprinkle with the remaining coriander and peanuts.
