Delicious marinated pork tenderloin skewers, perfect for grilling. Enjoy them on skewers or wrapped in pita pockets.
Ingredients:
  • 0.5 cup olive oil
  • 0.5 cup dry white wine
  • 1 medium lemon, juiced
  • 2 cloves garlic, chopped
  • 2 teaspoons dried oregano
  • salt and ground black pepper to taste
  • 2 pounds pork tenderloin, cut into 1 1/2-inch cubes
  • 3 large bay leaves, broken into pieces, or more to taste
Instructions:
  • Combine oil, wine, lemon juice, garlic, oregano, salt, and pepper in a bowl. Transfer the mixture to a resealable plastic bag. Add pork, ensuring it's coated with the marinade. Seal the bag after squeezing out excess air. Refrigerate for at least 24 hours, or up to 5 days.
  • Preheat the outdoor grill to medium heat and lightly oil the grate before cooking.
  • Take the pork out of the marinade and gently shake off any extra liquid. Skewer the pork onto metal skewers, alternating with broken bay leaves. Save the marinade for basting later.
  • Grill the skewers for 10 minutes, consistently turning and brushing with marinade. Once done, discard excess marinade and continue grilling until pork is fully cooked and the juices are clear, around 5 minutes more. Use a thermometer to ensure the pork reaches at least 145°F (63°C) in the center.
