Indulge in the deliciousness of fresh cherries!
Ingredients:
  • 18.40 gm olive oil
  • 4 (150g each) butterflied pork steaks
  • Steamed green beans, to serve
  • Steamed chat potatoes, to serve
  • 3 eschalots, peeled, thinly sliced
  • 40.00 ml port
  • 40.00 ml red wine vinegar
  • 53.75 gm caster sugar
  • 1 cinnamon stick
  • 3 whole cloves
  • 1/2 tsp black peppercorns
  • 6cm strip orange rind
  • 350g cherries, pitted
Instructions:
  • 1. Heat oil in a saucepan over medium heat. Sauté eschalots for 5 minutes until softened. Stir in port, vinegar, sugar, cinnamon, cloves, peppercorns, and orange rind until sugar dissolves. Add cherries and bring to a boil. Simmer on low for 20-25 minutes until cherries soften and mixture thickens slightly. Transfer to a bowl.
  • 1. Heat oil in a frying pan over medium-high heat. 2. Season pork with salt and pepper, then cook each side for 3 to 4 minutes or until fully cooked. 3. Serve pork with cherry relish, beans, and potatoes.
