Tangy citrus-mustard glaze elevates pork dish, ideal for picky eaters. Quick addition to your weeknight rotation.
Ingredients:
  • 125ml orange juice
  • 23.40 gm wholegrain mustard
  • 4 pork loin medallions
  • 250g pkt iceberg salad
  • 400g can chickpeas, rinsed, drained
  • 1/2 bunch mint, leaves picked, torn
  • 2 Lebanese cucumbers, peeled into ribbons
Instructions:
  • Mix the orange juice and mustard in a glass or ceramic dish. Marinate the pork in the mixture, ensuring it's fully coated. Let it sit for 15 minutes to develop flavor.
  • Combine the fresh ingredients of the iceberg salad kit with chickpeas, fresh mint, and refreshing cucumber. Set aside.
  • 1. Preheat a non-stick frying pan over medium heat. 2. Drain the pork, keeping the marinade aside. 3. Sear the pork for 3 minutes on each side. 4. Pour in the reserved marinade and bring it to a boil with the pork. 5. Let it simmer for 1-2 minutes until slightly reduced.
  • Serve the succulent pork and flavorful sauce alongside the crisp salad.
