Aged in wooden barrels, balsamic vinegar from white Trebbiano grapes offers a sweet, intense flavor without any fat. Elevate your dishes with its rich, dark color and delicious taste.
Ingredients:
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon dried basil leaves
  • 1/4 teaspoon garlic-pepper blend
  • 8 portabella mushroom caps (about 3 to 4 inches in diameter)
  • 1 cup packed baby arugula
  • 2 small tomatoes, each cut into 4 slices
  • 1 small avocado, pitted, peeled and thinly sliced
  • 8 slider buns, split
Instructions:
  • Preheat the broiler and line the rack in the broiler pan with foil, pressing it gently against the rack. Cut slits in the foil to align with the slits in the rack and place it back in the broiler pan.
  • Combine balsamic vinegar, oil, thyme, basil, and garlic-pepper blend in a gallon-size resealable plastic bag. Remove mushroom stems and add caps to the bag. Seal and coat mushrooms by gently turning the bag. Allow to marinate at room temperature for 15 minutes, turning the bag occasionally.
  • Arrange mushroom caps gill side up on a broiler rack in a pan, and generously discard any excess marinade. Broil with the tops of the mushrooms approximately 6 inches from the heat source for 6 to 9 minutes, remembering to flip them once, until tender.
  • Layer the arugula on the bottom slider buns, followed by mushrooms, tomato slices, and avocado. Finish by placing the top bun on each slider and secure with a toothpick if needed.
