Portuguese Chourico, Beans, and Rice

"Portuguese-inspired dish: Fava beans with dried chourico sausage, bursting with flavor."
Ingredients:
  • 2 cups water
  • 1 cup uncooked white rice
  • 2 tablespoons olive oil
  • 1 dried chourico sausage, halved lengthwise and cut into 1/4-inch slices
  • 0.25 Spanish onion, finely chopped
  • 1.5 cups tomato sauce
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 0.5 (14.5 ounce) can fava beans, rinsed and drained
Instructions:
  • Boil water in a pot, stir in rice, reduce heat, cover, and cook until all moisture is absorbed, around 30 minutes.
  • While the rice is cooking, heat oil in a skillet over medium heat. Cook the chourico in the hot oil for 2 minutes. Then, add the onions and garlic to the sausage and cook until the vegetables are soft and the chourico browns, about 5 to 7 minutes.
  • Combine the tomato sauce with the chourico mixture and simmer on low heat. Season with red pepper flakes, Italian seasoning, salt, and pepper, simmer for 10 to 15 minutes until heated through. Add fava beans and cook for an additional 2 to 3 minutes until heated. Serve over rice.
