Grill up zesty piri-piri chicken with a touch of lemon for a delicious spring meal.
Ingredients:
  • 1.3kg whole small fresh chicken
  • 40.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 5.00 gm ground paprika
  • 2 garlic cloves, crushed
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp dried chilli flakes
  • Lemon wedges, to serve
Instructions:
  • Place the chicken, breast-side down, on a clean work surface. Use kitchen scissors to remove the backbone. Turn the chicken breast-side up, flatten it, and tuck the wings under. Pat dry with paper towel and make shallow cuts all over the chicken. Transfer to a glass or ceramic dish.
  • In a bowl, mix together vinegar, oil, sugar, paprika, garlic, thyme, oregano, coriander, and chili flakes. Pour the mixture over the chicken, ensuring it is well coated. Cover the dish with plastic wrap and refrigerate for 2 hours to enhance the flavors.
  • Preheat a covered barbecue on medium heat or alternatively, preheat the oven to 200C. Grill the chicken for 5 minutes on each side until golden brown, then transfer to a roasting pan. Continue cooking in the covered barbecue or oven for an additional 40 minutes or until browned and juices run clear when chicken is pierced with a skewer. Allow the chicken to rest, covered, for 10 minutes before serving.
  • Arrange the chicken on a platter with lemon wedges for a beautiful presentation.
