Grill juicy piri-piri chicken with zesty lemon for a delightful spring meal.
Ingredients:
  • 1.3kg whole small fresh chicken
  • 40.00 ml red wine vinegar
  • 5.00 gm ground paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp dried chilli flakes
Instructions:
  • Place the chicken breast-side down on a clean surface. Use kitchen scissors to remove the backbone. Flip the chicken breast-side up and flatten it, tucking the wings under. Pat it dry with paper towels, then make shallow cuts into the meat with a knife. Transfer the chicken to a glass or ceramic dish.
  • In a bowl, mix vinegar, oil, sugar, paprika, garlic, thyme, oregano, coriander, and chili flakes. Pour the mixture over the chicken and ensure it's coated well. Cover with plastic wrap and refrigerate for 2 hours to enhance the flavors.
  • Preheat the grill on medium or oven to 200C. Cook chicken for 5 minutes on each side until golden brown. Transfer to a roasting pan and continue cooking in the grill or oven for another 40 minutes until browned and juices run clear when pierced with a skewer. Let rest covered for 10 minutes before serving.
  • Present the chicken in elegant portions on a platter, garnished with fresh lemon wedges.
