Flavorful Portuguese linguica sausage soup, perfect with crusty bread. Easy and fun to make!
Ingredients:
  • 3 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, chopped
  • 0.5 cup diced carrots
  • 0.5 cup diced celery
  • salt and ground black pepper to taste
  • 0.25 teaspoon red pepper flakes, or more to taste
  • 1 bunch kale, stems removed and leaves chopped
  • 2 bay leaves
  • 5 cups chicken broth
  • 0.5 pound linguica sausage, diced
  • 0.5 pound chorizo sausage, diced
  • 1 (14 ounce) can diced tomatoes
  • 1 (14 ounce) can garbanzo beans, with liquid
Instructions:
  • Heat oil in a soup pot until it sizzles, then add potatoes, onion, carrots, and celery. Cook and stir for a few minutes until slightly softened. Add garlic, salt, pepper, and red pepper flakes, and stir for a couple more minutes.
  • Add the vibrant kale and fragrant bay leaves to the pot. Cover and let the kale wilt for 2 to 3 minutes.
  • Combine the chicken broth, linguica, chorizo, tomatoes, and garbanzo beans with their juices in the pot and bring to a boil for approximately 5 minutes. Then, lower the heat to medium and simmer until the veggies are tender, around 15 more minutes.
