Traditional Portuguese sweet bread recipe: Make dough evening before, let rise overnight, bake in round pans next morning.
Ingredients:
  • 2 (0.6 ounce) cakes compressed fresh yeast
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 3.5 cups white sugar
  • 6 eggs
  • 5 pounds all-purpose flour
  • 1.25 tablespoons salt
  • 8 ounces butter, melted
  • 4 cups milk
Instructions:
  • Combine yeast with warm water in a small bowl and let sit for about 10 minutes until creamy.
  • Beat 6 eggs and sugar in a medium bowl until light and fluffy. In a large bowl, sift flour and salt then mix in dissolved yeast, egg and sugar mixture, and cooled melted butter. Slowly add milk to achieve dough consistency. Knead on a lightly floured surface for 15 minutes until soft and elastic. Place dough in a well-oiled bowl, cover with a damp cloth, and let it rise overnight.
  • The following day, preheat your oven to 400 degrees F (205 degrees C). Grease two 10-inch round cake pans. Split the dough in half, shape into round loaves, and put them in the greased pans. Brush the tops with beaten egg.
  • Start baking at 400 degrees F (200 degrees C) for 15 minutes, then reduce heat to 350 degrees F (175 degrees C) and continue baking for another 40 minutes until golden brown and loaves sound hollow when tapped underneath.
