Try this speedy, dairy-free pizza for a tasty meal!
Ingredients:
  • 2 wholemeal pizza bases
  • 60ml (1/4 cup) Classic Flavour Intensity Extra Virgin Olive Oil
  • 250g (2 small) Desiree potatoes, cut into 1.3mm slices
  • 21.00 gm lemon juice
  • 20.00 ml white balsamic vinegar
  • 250g baby brussels sprouts, thinly sliced
  • 150g prosciutto, torn
  • 45g (1/4 cup) hazelnuts, roasted, chopped
Instructions:
  • 1. Preheat your oven to 220°C (200°C fan forced). 2. Lay out pizza bases on 2 baking trays. 3. Mix garlic with 2 tablespoons of oil in a bowl, season with salt and pepper. 4. Place potato in a bowl and drizzle with 2 teaspoons of the oil mixture. 5. Brush the rest of the oil mixture over the pizza bases. 6. Arrange the potato slices over the pizza bases. 7. Bake for 12-14 minutes until golden and the potato is tender.
  • In a bowl, mix the remaining oil, lemon juice, and vinegar. Season to taste. Pour boiling water over brussels sprouts in a heatproof bowl and let stand for 1-2 minutes. Drain and rinse under cold water. Add sprouts to the vinegar mixture and toss to coat evenly.
  • Place the prosciutto evenly on the pizzas. Spoon the brussels sprouts mixture on top and generously sprinkle with hazelnuts.
