Create a delicious pie with just 4 simple ingredients.
Ingredients:
  • 12 slices prosciutto, rind removed
  • 3 pontiac potatoes, peeled, halved
  • 1kg ricotta
  • Quartered, roasted tomatoes, to serve
  • Rosemary sprigs, to garnish
Instructions:
  • Preheat your oven to 180°C. Grease a 30 x 10cm loaf pan and layer with overlapping prosciutto slices.
  • Simmer the potatoes in salted water until just soft. Drain and let them cool. Grate the potatoes into a bowl and combine with ricotta, eggs, 1 tsp salt, and 2 tsp black pepper. Mix thoroughly. Spread the mixture in a lined pan, top with overlapping prosciutto slices, and bake for 20 minutes. Let it cool for 10 minutes, then turn out, cut into slices, and serve with roasted tomatoes. Garnish with rosemary for a finishing touch.
