Potato and gruyere mash

Elevate mashed potatoes with Gruyere for a fancy twist, perfect alongside baked pork.
Ingredients:
  • 1kg Sebago potatoes, peeled, chopped
  • 40g butter, chopped
  • 125ml (1/2 cup) milk, warmed
  • 250.00 ml gruyere, grated
  • Butter, extra, to serve
  • Freshly cracked black pepper, to taste
Instructions:
  • 1. In a saucepan, submerge the potato in cold water and bring to a gentle boil over medium heat. Cook for 25 minutes until tender. Drain and return to the pan. Cook on low for 2-3 minutes until dry. Mash with a potato masher until smooth.
  • Slowly incorporate the butter and milk, then stir in the Gruyere until it is gooey. Season generously with salt and pepper and finish by adding a pat of butter on top.
