Potato and pea frittata

"Create a mouthwatering dinner with potatoes, creamy goat's cheese, and vibrant peas - only 5 ingredients needed!"
Ingredients:
  • 6 baby Red Royale or baby white potatoes, thinly sliced
  • 120g pea
  • 8 Free Range Eggs
  • 80g goat’s cheese, crumbled
  • 120g pkt Australian 4 Leaf Salad
Instructions:
  • 1. Heat a greased 20cm ovenproof non-stick frying pan over medium heat. Add one-quarter of the potato slices and cook for 1 minute on each side until light golden and tender. Transfer to a plate. Repeat with the remaining potato in three more batches.
  • Simmer the peas in a saucepan of boiling water until they are tender, then drain thoroughly.
  • Whisk the eggs gently in a medium bowl and season them to add flavor.
  • Preheat the grill to medium heat. Layer half of the potatoes at the bottom of the frying pan, then add half of the peas and goat’s cheese. Repeat with the remaining potatoes, peas, and goat’s cheese. Pour in the beaten egg and swirl the pan to evenly coat the ingredients. Cook over medium heat for about 6 minutes until the mixture is almost set.
  • Grill for 5 minutes or until perfectly set, then slice into wedges and enjoy with fresh salad leaves.
