Potato bites - 3 ways

Easy and versatile potato skin bites - topped with bacon, olives, or salami for a delicious snack in 30 minutes.
Ingredients:
  • 4 medium sebago potatoes or desiree potatoes
  • 36.40 gm extra virgin olive oil
  • 1 middle bacon rasher, trimmed, finely chopped
  • 62.50 ml pizza sauce
  • 375.00 ml grated mozzarella
  • 30g sliced salami, chopped
  • 10 black olives, sliced
  • 125.00 ml antipasto mix, roughly chopped (see note)
  • 37.60 gm sour cream
  • Sliced green onion, to serve
  • 40.00 ml crumbled fetta
Instructions:
  • Preheat your oven to 220C/200ºC fan-forced and line a large baking tray with baking paper.
  • Prepare the potatoes by scrubbing them clean and cutting them into 1.5cm-thick slices. Place the slices on a tray and brush both sides with oil. Season with salt and pepper, then bake for 25 minutes, flipping halfway through, until tender.
  • 1. Preheat a non-stick frying pan over high heat and add the bacon. Stir occasionally until it's lightly browned. Then, drain on a paper towel.
  • Layer the cooked potato with pizza sauce, half of the mozzarella, salami, and olives on the top third. Next, layer half of the remaining mozzarella and the bacon on the next half of the potato. Finally, top the last section of the potato with the rest of the mozzarella and the antipasto.
  • Continue baking for an additional 5 minutes, or until the mozzarella is melted and the toppings are heated through. Garnish the bacon potatoes with a dollop of sour cream and chopped green onions, and the antipasto potatoes with crumbled feta cheese. Serve while hot.
