Cheesy Cheddar-crusted chicken and rice casserole with water chestnuts in a creamy sauce, topped with a crunchy potato chip topping.
Ingredients:
  • 2 cups chopped, cooked chicken meat
  • 1 cup cooked white rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.66666698455811 cup mayonnaise
  • 2 tablespoons grated onion
  • 0.5 cup chopped celery
  • 1 (8 ounce) can sliced water chestnuts
  • 1 tablespoon lemon juice
  • 0.5 cup shredded sharp Cheddar cheese
  • 2 cups crushed potato chips
  • 0.25 cup water
  • salt and pepper to taste
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Combine chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt, and pepper in a large bowl. Mix thoroughly before spreading into a greased 9x13 inch baking dish. Top with cheese and potato chips. Bake in a preheated oven for 20 to 25 minutes until potato chips are golden brown.
