Chocolate spice cake made with velvety mashed potatoes and infused with cinnamon and allspice for a delicious twist!
Ingredients:
  • 1 cup margarine
  • 2 cups white sugar
  • 4 eggs
  • 2 (1 ounce) squares unsweetened chocolate, melted
  • 1 teaspoon vanilla extract
  • 1 cup prepared instant mashed potatoes
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 0.75 cup buttermilk
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) while greasing and flouring a 9x13 inch pan. Then, sift together the flour, baking soda, and salt, and set aside.
  • Combine margarine and sugar in a large bowl until light and fluffy. Add eggs one at a time. Mix in melted chocolate, vanilla, and mashed potatoes. Alternate adding flour mixture and buttermilk, stirring until just combined.
  • Transfer the batter into the pan. Bake in the oven for 45 minutes or until a toothpick comes out clean when inserted into the cake's center. Let it cool.
