Delicious Passover chocolate chip cookies made with matzo cake meal and potato starch, a perfect finale to your Passover meal.
Ingredients:
  • 1 cup matzo cake meal
  • 0.5 cup potato starch
  • 1.25 cups white sugar
  • 0.5 cup margarine, softened
  • 3 large eggs
  • 1 (12 ounce) bag chocolate chips
  • 0.75 cup toasted chopped walnuts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare two baking sheets with parchment paper.
  • Combine matzo cake meal, potato starch, and salt in a bowl, then whisk together until well blended.
  • In a large bowl, use an electric mixer to blend sugar, margarine, and eggs until smooth. Mix in dry ingredients until fully combined, then fold in chocolate chips and walnuts. Spoon out dough onto prepared baking sheets.
  • In batches, bake in the preheated oven, rotating trays halfway through, until lightly golden, 10-15 minutes. Remove from oven and place on wire racks to cool.
