Passover Chocolate Torte

Indulgent Passover chocolate cake made with kosher margarine, eggs, almonds, and rich chocolate.
Ingredients:
  • 0.5 cup pareve margarine
  • 8 ounces semisweet chocolate, chopped
  • 5 eggs, separated
  • 0.75 cup white sugar
  • 1 cup ground almonds
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line the bottom and sides of a 9-inch springform pan with foil, then grease the foil.
  • Gently melt margarine and chocolate on low heat until velvety smooth. Allow it to cool.
  • Whisk egg whites until stiff peaks form. In another bowl, mix egg yolks and sugar until creamy. Add chocolate mixture and ground almonds. Gently fold in beaten egg whites until fully combined. Transfer the mixture to a prepared pan.
  • Place an 8-inch baking pan filled with 1 inch of water on the bottom oven rack to create steam and enhance the torte's moisture.
  • Bake the torte in the preheated oven on the center rack for 45 to 50 minutes, or until the sides start to pull away from the pan and the center is set. Cover loosely with foil for the last 20 minutes of baking. Note: Cracks are normal, as the top will become the bottom later on.
  • Allow to cool on a wire rack for 10 minutes, then gently release the sides of the pan. Flip onto a serving plate and cool until completely set.
