Kosher for Passover cheesecake with chocolate macaroon crust. Perfect for Seder dessert: decadently rich.
Ingredients:
  • 1 teaspoon butter
  • 2.5 cups crushed chocolate macaroon cookies
  • 0.33333334326744 cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 4 teaspoons matzo meal
  • 0.5 teaspoon vanilla extract
  • 3 eggs
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C). Combine crushed macaroons and butter in a bowl, then press into the bottom of a 9-inch springform pan. Bake for 15 minutes, then cool before removing.
  • Combine cream cheese and sugar in a medium bowl and mix until smooth. Add matzo meal, milk, and vanilla, stirring until well combined. Gradually mix in the eggs one at a time.
  • In a small microwave-safe dish, melt the chocolate chips and butter together in 30-second intervals, stirring each time. Once melted, mix it into the cream cheese batter. Pour the mixture over the cooled crust and ensure the top is smooth.
  • Bake in the preheated oven for 40 minutes, or until the center is set with a gentle jiggle.
