Create a delicious vegetable quiche with a crust made of cheesy mashed potatoes for a comforting meal.
Ingredients:
  • 3 potatoes, peeled and cut into chunks
  • 0.25 cup butter, cut into pieces
  • 2 eggs
  • 1 (5 ounce) can evaporated milk
  • 1 (16 ounce) package frozen mixed vegetables, thawed
  • 1 tablespoon dry bread crumbs
  • salt and black pepper to taste
Instructions:
  • In a pot, cook the potatoes submerged in water until tender. Drain and steam for a minute. Add butter to the pot and mash with a masher until smooth.
  • Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie plate or quiche dish. In a bowl, whisk together eggs and evaporated milk until fully combined.
  • Spread the mashed potatoes in the pie plate creating an even 1/2-inch thick crust. Add the vegetables, Cheddar cheese, then pour in the egg mixture. Sprinkle with breadcrumbs, salt, and pepper.
  • Bake in the preheated oven for 40 to 50 minutes or until a knife inserted in the center comes out clean. Allow the quiche to rest for 10 minutes before cutting into wedges to serve.
