Indulge in delicious, guilt-free pasta bursting with flavor and without the excess fat!
Ingredients:
  • 500g fresh potato gnocchi (see note)
  • 800g can diced Roma tomatoes
  • 100g 97% fat-free shaved leg ham, roughly chopped
  • 1 green capsicum, deseeded, diced
  • 82.50 ml basil leaves
  • 125.00 ml grated light mozzarella cheese
  • 40.00 ml small basil leaves, to garnish
Instructions:
  • First, heat your oven to 180°C. Then, lightly grease a 5cm deep, 16cm x 23cm ceramic baking dish. Finally, mix together uncooked gnocchi, tomatoes, ham, and capsicum in a large bowl.
  • Finely chop fresh basil and mix it into the gnocchi dough.
  • Spread the mixture evenly in the baking dish. Top with a generous sprinkle of cheese. Bake for 25-30 minutes until the gnocchi is tender. Finish with a sprinkle of fresh basil leaves before serving.
