Delicious Trondheim-style potato dumplings filled with savory ham, served with melted butter, crispy bacon, and stewed peas. Enjoyed by Norwegian and Norwegian-American families alike.
Ingredients:
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon ground black pepper
  • 4 cups potatoes, peeled and grated
  • 2 tablespoons grated onion
  • 8 ounces cooked ham, cut into 1 inch cubes
  • 2 teaspoons salt
  • 1 cup melted butter
Instructions:
  • Combine flour, 1/2 teaspoon salt, baking powder, and pepper in a bowl. In a separate large bowl, mix potatoes and onion, then add the flour mixture and blend well. Knead the potato mixture in the bowl using floured hands until it resembles stiff bread dough, adding more flour if needed.
  • Take a small handful of dough, wrap it around a ham cube, ensuring the ham is completely enclosed. Repeat with the rest of the dough and ham cubes. Save any leftover ham for later.
  • Fill a large pot with water and add 2 teaspoons of salt along with the extra ham. Bring to a boil over medium-high heat. Gently place the balls into the boiling water in batches, ensuring they don't stick to the bottom. Let them simmer for 45 minutes to 1 hour. Using a slotted spoon, remove and drain them on a plate. Serve hot with melted butter.
