Try this delicious and simple casserole featuring broccoli, cheese, chicken, and mashed potatoes that will remind you of Shepherd’s Pie - a family favorite!
Ingredients:
  • 2 bags (12 oz each) or 1 bag (24 oz) frozen broccoli & cheese sauce
  • 1 1/2 cups water
  • 2 tablespoons butter
  • 1 1/4 cups milk
  • 1 box Chicken Helper™ crispy ranch chicken
  • 2 oz cream cheese, cut into pieces
  • 1/2 cup shredded Colby-Monterey Jack cheese blend (2 oz)
  • 2 cups (3/4-inch cubes) deli rotisserie chicken
  • 1 teaspoon parsley flakes
Instructions:
  • Preheat oven to 400°F. Grease a 2 1/2-quart oval baking dish with cooking spray and set it aside. Cook frozen broccoli according to microwave directions on the bag.
  • In a 2-quart saucepan, bring water and butter to a rapid boil; then, take it off the heat. Stir in 1/2 cup of milk and the potatoes from the Chicken Helper box until fully combined. Allow it to sit for about 1 minute until the liquid is absorbed, then vigorously whip with a fork. Add half of the seasoned crumbs from the Chicken Helper box and the remaining 3/4 cup milk. Mix thoroughly, using an electric mixer if needed.
  • Combine the cooked broccoli mixture with cheeses in a large bowl until cheese is melted. Mix in the chicken and seasoned crumbs until well combined. Transfer the mixture to a baking dish and spread the mashed potato mixture evenly over the top. Sprinkle with parsley before baking.
  • Bake without covering for 20-25 minutes until the casserole bubbles and the potatoes lightly brown. Allow it to rest for 10-15 minutes before serving.
