Potatoes baked in lemon salt

Ingredients:
  • 600g baby red-skinned potatoes
  • 9.60 gm sea salt flakes
  • 2 tsp finely grated lemon rind
  • 1 tsp cumin seeds
  • Chopped dill, to serve
  • Lemon zest, to serve
  • Creme fraiche, to serve
Instructions:
  • Preheat your oven to 200°C. Line a roasting pan with baking paper. Add the potatoes to the pan and drizzle with oil. Mix salt, lemon rind, and cumin in a small bowl. Sprinkle this mixture evenly over the potatoes and gently toss. Bake for 20 minutes in the preheated oven, turning occasionally, until golden and cooked through. Remove from oven.
  • Transfer the potatoes to a serving bowl. Top with dill and lemon zest. Serve promptly with crème fraîche, if desired.
