Elevate classic apple bread with Gold Medal® flour, crunchy pecans, and a decadent caramel glaze.
Ingredients:
  • 1 1/2 cups chopped pecans
  • 1 container (8 oz) sour cream
  • 1 cup granulated sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • 2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups finely chopped peeled Granny Smith apples (about 3/4 lb)
  • 1/2 cup butter
  • 1/2 cup packed light brown sugar
Instructions:
  • Preheat oven to 350°F. Grease a 9x5-inch loaf pan with shortening and lightly flour it. Spread 1/2 cup of pecans in an ungreased shallow pan and bake for 6 to 10 minutes, stirring occasionally, until they turn light brown.
  • Combine sour cream, granulated sugar, eggs, and vanilla in a medium bowl. Using an electric mixer on low speed, beat for 2 minutes. Gradually add flour, baking powder, baking soda, and salt until just blended. Gently fold in apples and toasted pecans. Transfer batter to the pan and top with remaining cup of pecans, pressing lightly.
  • Bake for 1-1 hour 5 minutes until a toothpick inserted in the center comes out clean. If needed, cover with foil during the last 15 minutes to prevent overbrowning. Allow to cool for 10 minutes, then remove from pan onto a cooling rack.
  • In a 1-quart heavy saucepan, bring butter and brown sugar to a boil over medium heat, stirring constantly. Boil for 1 minute. Drizzle glaze over the bread. Allow to cool completely for about 2 hours.
